This is our inagural "Idyllwild Deer Sightings" wine release.  This is the first in a series of Idyllwild artist-inspired labels, part of the proceeds from all sales of this bottling will be going to support the Art Alliance of Idyllwild.

The "Deer Sightings" project is Idyllwild's first large-scale installation art project that placed 22 life-size and life-like deer painted by local artists around our town of Idyllwild, California.  You can read more about the project in our Summer 2014 Newsletter.

This is label-art design winner Darcy Gerdes' deer she painted named "Spirit of Tahquitch".  (Note: The original spelling was 'Tahquitch' but current spelling is 'Tahquitz'.)  Perhaps the most prominent and well-known landmark in Idyllwild is Tahquitz Rock. It was made legend by native tribes who told tales of disappearing maidens.  Chief Tauquitch was suspected of the terrible deeds. Darcy’s deer chronicles a boulder battle between the braves and their evil chief that tore deep holes in the earth and formed local lakes that we enjoy today.

This medium-bodied Cab Sauv is bright and juicy … or, as one of our friends exclaimed, “It’s a happy wine!”  It starts with an abundance of dark fruit aromas like blackberries, black cherries and blueberries along with a hint of baking spice.  Let it open up a bit, and ripe red berry fruits pop out.  With a silky smoothness and just the right amount of bite, this very approachable Cab Sauv is poised between richness and restraint.  It’s a perfect match for beef or lamb dishes, especially when accompanied by earthy foods like root vegetables, olives, mushrooms and red bell peppers.  Cap the meal with a bowl of berries topped with a dark chocolate sauce, and you’ve got a winner!

Food Pairing Notes
